The Best Gluten Free Cookie Mix-Pamela’s!

Pamela's Chocolate Chunk Cookie MixAbout six years ago I was told I had a very high sensitivity to gluten.  I immediately discontinued eating gluten.  A couple years later I found out I have one of the genetic markers for Celiac disease.  Needless to say, I am very careful about my eating.  I read labels very carefully and eat mostly whole foods.  Perhaps you have been told by your medical practitioner that you should not be eating gluten.

However, I still like to have a sweet treat every now and then.  Baking has always been something I enjoyed doing my whole life, and with my daughter and then my granddaughter, especially chocolate chip cookies.  The people I worked with always relied on me to bring delicious treats.

Enter gluten-free (GF)eating.  At first I tried to make my own cookies using individual GF flours and other ingredients.  It was time consuming to mix up the baking mixes and then I had to store them.

Then I found Pamela’s gluten free baking mix products.  Oh, my goodness.  Delicious!!  My favorite is the Chocolate Chunk cookie mix.  The cake mixes and the brownie mix are fantastic, too.  All in a little bag.  Just add butter/oil and an egg or two, depending on the mix.  Since I can’t have dairy, soy or eggs, I substitute EarthBalance soy-free dairy non-butter and 1/4 cup applesauce for the egg.

I have gotten rave reviews.  My granddaughter calls the applesauce our “secret ingredient.”  I just leave the cookies in the oven a little bit longer than what the package says, if I use the non-butter and applesauce.

Please try the Pamela’s gluten free products, even if you don’t have to eat gluten-free.  The people in my husband’s office can’t tell that they are GF cookies and brownies.  Enjoy!!
